2 chicken breasts
1 teaspoon chicken spice
1 teaspoon garlic powder
1/2 teaspoon ginger
1 1/2 cups dried apricots
2 onions cut into squares and separated.
2 cups apricot nectar
Cube chicken breasts into large cubes (they will shrink during cooking)
Leave the apricots whole and in a large bowl add chicken, apricots and onions.
Add in all the dry spices and coat everything well.
Now add apricot nectar making sure all is coated.
Cover with cling wrap and place in fridge about an hour.
Remove from fridge and thread onto skewers.
I cooked mine in the oven on 200 for 35 minutes and served it on a bed of mashed potato.
