‎Sadsac’s Danish Herring for the Jewish New Year

6 matjes herrings soaked for 25 minutes.
1 cup diced onions
3/4 cup of sugar (I used a cup)
1 teaspoon mustard powder
1 1 /2 cups granny smith apples diced
1 cup white vinegar
1/4 cup canola oil
1 cup tomato sauce

Rinse the herrings after soaking and pat dry.
Cut the herring into bite size pieces and place in a large storage container. Add the apples and onions and mix.
In a large jug add the rest of the ingredients making sure the sugar has just about dissolved and the mustard powder is well blended.
Pour the sauce over the herring mixture and stir well.
Place in the fridge for about 5 days.
Take out the fridge twice a day and mix well and return to fridge.
Repeat this for five days and then on the 5 day dig in and enjoy
