‎Shyama's Apple and Apricot Jam Turnovers

1 roll PennyWise puff pastry
thawed as per pkt instruction
3 small golden delicious apples.
Peeled, cored and sliced.
Sprinkle few drops lemon juice so apples doesn’t turn brown.
Apricot Jam
Method
Place apples in pan on low heat, simmer for about 8 minutes.
To apples in the pan, add:
4 level tbspn sugar
Pinch of cinnamon pdr
Pinch of nutmeg pdr
Simmer until liquid evaporates.
Leave aside to cool.
Unroll puff pastry, cut into 6 equal squares, share the apple filling evenly onto the pastry, add some apricot jam, brush edges with water, fold over to form triangle and press with fork and finger to seal edges.
Make 3 slits across pastry for air vents.
Brush top with little water and sprinkle with icing sugar.
Place pastries on greased baking tray and bake in preheated oven at 180 to 200 degree C and bake for about 15 -18 minutes or until golden brown and risen.
Dust with icing sugar if desired.
Jam will seep through…enjoy.
