Being an extended Easter holiday here in South Africa today, NOT all of us were on leave, I had to very early, quickly prepare this meal for my kids before heading to work, this is my quick and easy boneless chicken curry with a basic Rice Pilau. (more…)
I was just about to make a Chicken Curry when I saw a post for Pilau. I’ve always wanted to try it so thought today a good a day as any. It was absolutely divine. I will add more chilly next time. Either that or the green chilies from my cousin’s garden were useless 😊 (more…)
Fry chopped onions till golden brown, add 500 g cubed chicken or lamb, 1 tsp salt, few cloves, cardamom pods and cinnamon sticks, 2 tsp ginger and garlic paste, chilies to taste, 1 tsp ground coriander powder, cook till almost soft and add 3 grated carrots, cook for a few minutes more, and add washed rice.
Bring to the boil and reduce the heat to lowest and steam till the rice is soft.
Serve with dhai and poppadoms or sambals.
