Alwyn’s Mother’s Day Roast

TRH Alwyn's Mother's Day Roast

1.25kg beef rib roast
Fresh garlic – store bought
Spices of your preference
1 large portabella mushroom

Place rib in roasting dish.
Rub liberally with crushed garlic, or store bought
Spice well with any spices of your own choice
Roast at 350F for approximately 1 hour
After an hour, slice mushroom into 4 thick slices
Add and bake for another ½ hour

Serve with steamed broccollini and rice
