Baby Brinjal and Dried Shrimps Want to spice up your food a bit – try Baby Brinjal
Ingredients
1 large finely chopped onion
Few dry chillies
1 tsp ginger and garlic paste
Oil
1 tsp turmeric
1 tsp cumin and coriander
1 tsp chilli powder
Dried shrimps
2 grated tomatoes
Curry leaves
Sliced Brinjal
Method
Soak shrimp in hot water and rinse well.
Braise onion, shrimps in hot oil with dry chillies
Add turmeric, cumin, coriander, chilli powder one at a time.
Mix and add ginger and garlic, Brinjal, tomatoes and curry leaves.
Leave to cook on high till curry dries up, add a little water optional or just reduce heat and cook till Brinjal is soft and oil surface, add salt to taste.
