Banana Ring Slivered Almonds

Banana Ring Slivered Almonds, a slight variation on the theme, but that’s me, I love to alter and change and make it my own. Hope you will enjoy it

Ingredients:

  • 3 ripe Bananas
  • 1 heaped teaspoon baking soda
  • 55g margarine
  • 1 cup white sugar
  • 1 large egg
  • 5ml vanilla
  • 1½ cups self-raising flour
  • pinch of salt
  • ½-¾ cup slivered almonds – optional. I normally just eyeball it. I never measure this as it’s as per your own preference and taste.

Method:

Preheat the oven to 325F.
Grease a pan generously with spray and cook or something similar.
This time I decided to bake it in a ring pan – just to be different.
It’s easy to slice and you will have more manageable portions.
If you do not have overripe bananas, nuke the bananas in the microwave for approximately 40 seconds, this helps to soften them.
Mash bananas in a small bowl and sprinkle with baking soda and set aside
In a separate bowl cream (with an electric hand mixer)the margarine, sugar, egg, and vanilla till light in texture and it has a nice pale color.
Add the mashed bananas. Beat again and mix thoroughly.
Add self-raising flour and salt. Now use a spoon and mix it till no flour is visible.
Pour in greased pan.
Should you use a ring pan, then you need to place the almonds on the bottom with the batter on top.

Bake for approximately 50 minutes–1 hour. Mine done after 50 minutes
