Rack of Pork side ribs
6 large potatoes
1 bunch of kale
1 punnet of small brown mushrooms
2 small zucchini
2 bunches of spring onions
±3/4 stick garlic butter
Aromat to taste
Dry Basil leaves
Dry Thyme leaves
Dry crushed rosemary
BBQ the ribs to taste.
We spice half of it just with salt and the other half with BBQ sauce.
Peel, cut in cubes and boil potatoes till soft.
Mash, add margarine/butter and milk, or just use the water cooked in, and spices to taste.
Cut all the veggies into bite size chunks
Use a deep wok, of large pan and melt the butter
Add the zucchini and mushrooms and fry on high till just about done.
Remember you will add the rest of the veggies so you do not want to overdo the zucchini and mushrooms
Add the rest of the spring onions and kale, and keep on stirring and mixing till the kale wilted.
Spice to your taste.
