BEEF IN OYSTER SAUCE WITH BROCCOLI

You can make your very own stir-fried beef with oyster sauce

Ingredients
500 beef fillet
2 cups oil
3 slices fresh ginger, thinly sliced
2 crushed garlic cloves
½ tsp salt, ½ tsp sugar
2 TB shaoxing rice wine (sherry)
500 gr broccoli
150 gr bean sprouts
2 spring onions chopped (for garnish)

Marinade
½ tsp bicarb, 1 TB shaoxing rice wine, 1 tsp sugar, 3 TB soya sauce, 1 TB corn flour
3 TB water (Mix a glass bowl and set aside)

Sauce
½ cup oyster sauce, 1 TB Soya sauce, 1 tsp sugar, 2 TB water, ½ tsp corn flour
½ tsp sesame oil

Method
Slice beef in big but thin slices.
Add beef to marinade.
Bring a pot of water to a boil and add 1 chicken stock cube and 2 slices of ginger).
Cut broccoli into florets and add to boiling water and blanch for 2 minutes.
Drain and submerge in the ice bath for 30 seconds, drain and set aside.
Heat 2 Tbsp oil to wok and stir-fry broccoli for 30 seconds, add beans sprouts, salt, sugar and shaoxing rice wine. Remove.
Add 2 cups oil to wok, when hot add beef and stir till color changes. Remove and drain oil.
Add another slice of ginger and garlic, stir 1 minute, return the beef and stir over high heat.
Make a well in the center and add sauce and mix through.
Add broccoli and sprouts and mix through.
Put on a platter and garnish with spring onion.
Serve with steamed Jasmine rice.
