My first time making a birthday cake.
1 cup castor sugar
1tsp lemon rind
1tsp vanilla essence or extract
2 cups self-raising flour
1 cup full cream milk
Preheat oven to 180 degrees C.
Add sugar and continue mixing
Add eggs one at a time mixing well between additions
Stir in lemon rind, vanilla essence and oil
Sift flour in batches with a little milk.
Bake for 30 – 40 minutes or until cake is cooked. Test with a skewer.
Butter cream Icing
125grams soft butter
2 cups icing sugar
1tsp vanilla essence
1 Tblsp hot water
Sift icing sugar into butter mixture
Add hot water and vanilla essence
Mix until smooth and creamy, some milk can be added depending in how thin you would like your icing.
*I used 2 x 20cm pans and baked for 30 minutes.
*you can use sugar instead of castor just beat a little more
Boudoir biscuits dipped in chocolate,variety of chocolate balls, marshmallows, ribbon.
