I love flapjacks, but sometimes especially on a fasting day or during the fasting period, I have this sugar craving.
Most eggless flapjacks are heavy and always have this raw funny after taste expect for this recipe.
It is quick, easy and simple to make.
It was so quick that I was able to whip up the batter while the kettle boiled for my morning coffee.
Ingredients:
1 cup cake flour.
¾ cup fresh blueberries.
1 cup milk.
1 tbsp. light brown sugar.
½ tsp salt.
1 tbsp. margarine.
1 tbsp. baking powder.
Method
Mix all the ingredients in a bowl, except for the blue berries.
Whisk until everything is well combined.
Fold in the blueberries.
Heat a pan over a medium heat.
Drizzle some oil into the pan.
Pour a ladle full of the batter into the pan and allow to brown slightly on one side, flip over and brown the other side.
Repeat this until all the batter has been used.
Drizzle with maple syrup and enjoy
