1 x 200 g pkt Tennis/Digestive biscuits crushed in zip lock bag with a rolling pin.
100 g melted butter
Combine to form a Base in a round pie dish or a spring form tin that has been greased
Beat 250 ml cream until stiff.

Jersey peaches have made an entrance at the stands of the local farmers markets. Sweet, juicy and versatile peaches make a great addition to salads, meats, especially pork and of course delicious desserts. When I purchased my first peaches of the season I was instantly returned to my childhood. Near my Aunt’s home on Kresson Road were acres and acres of peach trees.

When I hosted dessert nights on the compound and had a bakery, one of the things I made was Peanut Butter Pie. On a recent visit my mom requested peanut butter pie. I looked around but realized once again that my book with the hand written recipes was left behind in Saudi! So, I made this one trying to remember the exact ingredients and mom loved it! Of course now we will be back to making numerous Peanut Butter Pies!
