Caz’s Malva Pudding

1 1/2 cup flour
1 cup sugar
1tsp bicarb
2 eggs
2 Tbs butter
3 Tbs apricot jam
1/2 cup milk

SAUCE (Bring to a boil)
1 cup fresh cream
1 cup water
1 cup sugar

Preheat oven to 180C
Beat eggs, butter, apricot jam and milk together.
Add the dry ingredients.
Bake for 25 minutes.
Switch off oven.
Pour boiling sauce over and leave to rest in the switched off oven for a few minutes.
Serve with a hot drop custard.
