TRH Chicken casserole

Marinade 1kg chicken with 1tsp salt,
1 tbls ginger and garlic paste,
2tbls peanut butter,
pinch of nutmeg,
juice and rind of 1 lemon,
1/2tsp thyme,
2tsp onion powder,
2tsp paprika,
chillies to taste.

In a pyrex add 4tbls olive oil, 2tbls coconut cream, add the chicken, sliced onions, 3 courgettes cut into rings, potatoes.
Cover and bake at 180 degrees until cooked through.
I baked it for an hour.
