Chicken Parmigiana Tried Tested

4 chicken breast fillet
Salt and milled pepper
Olive oil
4 cloves garlic,finely chopped
1 can whole potatoes,crushed
1 can peas in brine drained
Baby potatoes boiled
Cheese of your choice plus extra for serving

1. Preheat oven o 200C season chicken and rub with oil. Sear on one side in hot pan until well browned.
2. Place chicken, browned side up, in a small ovenproof dish. Heat a glug of oil in a pan and fry garlic. Tip in tomatoes and simmer for a minute. Season well.
3. Pour over chicken,top with peas and baby potatoes, scatter grated cheese over chicken. Bake for 15-20 minutes until chicken cooked. Serve with extra cheese, plus side of salad or spaghetti.
