TRH Chunky chicken

Last night was clueless what to make with chicken.

I cut the chicken into chunks.
I fried thickly sliced onions and leeks till golden brown and added the chicken and fried it until it browned a bit then added baby potatoes, sliced carrots and swede, salt, pepper and chilli to taste, ginger and garlic, fresh thyme and cooked it through before adding 1 tin of chopped tomatoes, 2tbls sugar and cooked until blended.
Served with yellow rice and salad
