Classic cook milk tart  Tried Tested

100ml butter
100ml sugar
2 large egg
200ml sifted cake flour
1 tsp baking powder
1 pinch of salt
For the custard filling:
4 large eggs seperated
3ml vanilla essence
3 cups milk
25g sifted cake flour
25g corn flour
1 pinch of salt
100g sugar
25g butter
Ground cinnamon

Preheat oven to 190C
Blitz all ingredients in a food processor or electric beater together ti form a dough . Press into lightly 24cm dish. Chill in the fridge while preparing the filling. Heat the milk in a medium saucepan ( do not boil) beat the yolks and sugar until creamy and light then add the flour and salt-mixture will be quite thick add some warm milk to the egg mixture and then return to all of it to saucepan , bring to boil and whisk constantly until thickened. Remove from heat and whisk in the butter and vanilla. Whisk the egg whites in another clean bowl until soft peaks and fold into the custard. Pour into the chilled pastry case and sprinkle cinnamon . Bake for 30 minutes. Enjoy !!!!
