TRH Colleen's Crispy Chicken

6-8 chicken pieces
chicken spice
Spicy cajen spice
Little salt
Flour

Method
Wash and clean chicken pieces & drain in a rice colander/strainer
Sprinkle little salt on chicken pieces, put chicken in a bowl & sprinkle about a tablespoon of chicken spice over chicken & about 1 tblspoon of spicey cajen spice, mix well
Then coat chicken pieces with flour until well covered.
Heat oil in pot and when oil is hot, shake off excess flour and fry chicken
Turn chicken pieces after 10 mins when the first side is golden brown & crispy
Fry other side of chicken
Test the thickest part of chicken & when the juices runs clear, then chicken is done
