Colleen’s Small Malva Pudding

TRH Colleen's Small Malva Pudding with sauce

1cup sugar
1cup cake flour
1tblespoon apricot jam
1tblespoon vinegar
1tblespoon bicarb
1tblespoon butter/marg
1cup milk

Mix all the ingredients together and pour in meduim pyrex dish and bake @ 180deg for 30mins
Pour the sauce over and allow to soak in, it should be nice and moist, that’s how a malva pudding should be
Serve with custard, cream or ice cream

P.S: there is no baking powder in

1 cup milk
1 cup sugar
1 teaspoon vanilla essence
2 tblespoons of butter/margerine

Boil altogether until sugar has dissolved for about 10mins
Pour over malva pudding as soon as you take it out of oven
Enjoy with cream or custard or ice cream
