Crispy potatoes on the outside, but soft on the inside – perfect.


  • 5 potatoes cut into wedges/halves
  • Salt
  • Spicy cajun spice
  • Chicken spice
  • Flour
TRH Colleen's Crispy Potatoes


  1. Peel potatoes &cut into wedges /halves
  2. Put into a jiffy /bread bag & microwave for 5-6mins, until potatoes are tender but not overdone.
  3. Transfer potatoes to a bowl & coat with salt, spicey cajun spice & chicken spice
  4. Toss to coat well, coat with the flour
  5. You can add fresh or dry herbs or parsley to the flour
  6. Fry the potatoes after you fried the chicken until the potatoes are crispy on the outside & soft inside.
