Clean 20 crayfish tails
Cut neatly open and cook tails for aboit 15 to 20 in salted water
Take out of shell when cooled off and cut crayfish meat up in pieces
Add chopped red and yellow pepper, chopped parsley and thyme and add 3 spoons mayonaise and 1 spoon sugar and mix everything together
Dish cocktail back in crayfish tails shells, sprinkle with chopped parsley.
