02 Oct Corlea’s Pork and Kale on a Cheese Scone
3 1/2 cups flour
2 teaspoons baking powder
Salt, if desired
150 mL butter, melted
4 cloves garlic, finely diced
1 tablespoon onion powder
2 cups cheese, grated
2 cups milk
Preheat oven to 375°F and line 2 baking sheets with parchment.
Sift dry ingredients together, then mix the melted butter through until it resembles coarse crumbs.
Add garlic, onion powder, and cheese and combine.
Make a well in the center and pour milk into it.
Mix gently until just combined – don’t overmix.
Divide the mixture into 10 large biscuits and bake for 25 minutes or until they just start to brown on top.
While they bake, saute a sliced onion in butter. Add about 1 1/2 cups ground pork and brown slightly.
Add 2 tablespoons soy sauce, 1 teaspoon Italian seasoning, 1 teaspoon onion powder, and pepper to taste. Continue cooking until well browned.
Add 1 bushel finely chopped kale, mix through, and remove from the heat right away.
To serve, top a sliced biscuit with a generous spoonful of the pork, sliced tomatoes, thinly sliced onion, and lettuce.
Also delicious with a dash of HP Sauce.
