Ingredients:
3 eggs
125 ml oil
125 ml buttermilk
250 ml sugar
250 ml selfraising flour
7,5 ml baking powder
30 ml cocoa
Beat eggs, oil, buttermilk and sugar with an electric mixer
Add sieved dry ingredients and mix through by using a egg whisk and till all incorporated and no dry spots or lumps visible.
Bake for ±15-20 min at 180C / 350F.
I still had enough Betty Crocker chocolate frosting left so I decided to use it.
As I use a rather high/deep cupcake pan, I usually cut the cake in half, spread it with frosting in the middle as well as on top and then decorate with any topping you prefer.
