500g bag of uncooked Rice noodles
Cook the rice noodles till al-dente. Strain in a colander and drizzle with olive oil.
Use a fork and stir slightly to ensure that it does not clump together and get sticky.
Set aside till cold.
Cut the following ingredients into small pieces:
1 medium size head of broccoli
6-8 spring onions
3 celery ribs
1 large orange pepper
1 small bottle sun dried tomato
Then add the following
1 small bottle capers
1½ cups julienne carrot
1 small bag of bacon bits
Add the cold noodles and container 1 in a very large transportable dish that will seal properly and mix together.
Add a large handful of each of the following:
400g (1 tub) crumbled feta cheese
±18 baby tomato
As I took this to a potluck, I did the final mixing at the event.
Add containers 2, 3 and ¾ of container 4 together. Toss to mix.
Then decorate with the container 5 (tomato) and remainder of container 4 (crumbled feta).
Note: All the ingredients listed can be substituted with whatever you like or prefer and the quantities can be adjusted depending on the size of dish you wish to prepare. This is a very forgiving salad, so do not worry about the exact measurement of each ingredient. It’s a salad after all!! <3
