Es's Roasted Chicken, Roasted Potatoes and Steamed Green Breans

Roasted Chicken
1 whole chicken
Fresh or bottled garlic
Sea Salt
Chicken Spices
Dried Rosemary
½ – 3/4 onion
Preheat oven to 350F
Wash and clean the chicken properly.
Add a mix of the spice, onion and garlic in the bottom of a casserole
Place chicken in casserole, and spice again as above.
We usually place some onion in the cavity and some on top of the chicken as well
Cover with casserole dish lid and bake for 1½ hours till tender.
Roasted Baby Potatoes
12 baby potatoes, or how many you like
Peel, and place around the chicken in the casserole and bake together with the chicken.
Once chicken tender and done, spoon out the potatoes and place in a separate dish and drizzle with bottom with oil.
We lightly drizzle some oil over the potato as well and then seasoned with a seasoning salt (your own preference)
Return to the oven and bake till crisp.  It’s so soft and moist on the inside and will have a crispy outer shell.
I turned the oven on broil, but keep an eye on the potatoes as this can easily burn to charcoal.
When potatoes nearly done, return the chicken casserole, without the lid, to the oven and grill/broil the top of the chicken.
Steamed Beans
This is the easiest and healthiest way and we do not do veggies any other way.
Only top and tail the beans, wash and place in steamer and steam till all dante.
Dish us, and sprinkle beans with a pinch or two or fresh parmesan cheese if you care for it.
