Es's Sweet Potato Toast Breakfast

The “Sweet Potato Toast” popped up on Pinterst, FB and everywhere!!!
I am not one to get on the bandwagon and test everything I see, but this one I just had to give a go, so this is my own modified, combined version of many posts I reviewed.

Ingredients:
1 large sweet potato. Pick one with a good shape, it should be the roughly same diameter all over. (see picture of ingredients above)
Egg (one egg per slice)
4 Spring onions, diced (one per slice of toast)
Avocado
Cheese
Salt
Freshly ground black pepper
Method:
Slice the sweet potato (lengthwise) in ± 1/4-inch thick slices.
Place in your toaster, on the highest setting available.  Be warned it will not be ready after one toasting session. You may have to pop it back once or twice till it pops back up nice and tender. Once you can pierce the flesh with a fork, it’s ready, or else, keep toasting.
Bake your egg as usual, and when almost done, scatter the diced onions over the eggs and cook for another minute. Here I covered the pan with a lid, just to have a little extra heat to slightly soften the onions.
How to assemble:
Start off with the sweet potato
If you prefer, and want to use the cheese, then it’s time to top the sweet potato with the slice of cheese.
Add your baked egg with spring onions
Sprinkle with salt and freshly ground pepper
Add slices of avo on the side and dig in and enjoy!!!
I will for sure make this again (just love <3 <3 it)
My husband prefers a regular slice of brown bread.  He did try a bite of mine, and said its good, but as he does not like ‘sweet’ stuff, he stuck to his toasted brown bread.
He had toast, and one with corned beef, and the second one with a slice of cheese topped with egg and spring onion and avo, as seen below.
