1kg hake fillets with skin on
3 large onions slice in rings
Ina Paarman Fish Spice and Lemon and Pepper seasoning
Fisherman’s Spice seasoning
Robertson’s Peri Peri spice
Less then 750 ml White Spirit Vinegar
125 ml water and heaped Maizena/Cornflour (make a paste)
3 Bay leaves
Hake in batter:

This is the easiest recipe to achieve this!
1 cup flour
1 teaspoon baking powder
½ teaspoon salt
1 cup Soda water
1 tablespoon lemon juice
Mix flour, baking powder and salt together.
Add Soda water slowly and beat until batter is smooth. before dipping fish in batter coat it with spiced cake flour
Dip fish, into batter, allow excess to drip off.
Deep fry until golden brown.Drain on paper towel or strainer.
Add sliced onions,bay leaves, peppercorns with vinegar and water.
Add 1 teaspoon Suhana mild chilli powder
1 teaspoon turmeric
1 teaspoon Crayfish masala (avail at OSMAN, STORE)
1 teaspoon Mother in law spice
sugar and Maizena paste.
Boil until onions is transparent.
Put battered fish in a glass dish with lid and pour curry sauce over the fish.
