Description
Healthy, low carb gluten-free, flax meal. It does not contain any flour whatsoever and is very versatile. You can make it in a Flatbread, Focaccia, or even Pizza-like. The sky is the limit and you will enjoy each one individually.
Ingredients
- 1 1/2 cups flax meal
- 2 tsp baking powder
- 1 tbsp sugar (I use Lakanto sugar-free sweetener)
- 1/2 tsp salt
- 1 1/2 tsp oregano (I left this out today, but often use herbs in this recipe)
- 3 tbsp olive oil
- 3 eggs
- 1/2 cup of water
Instructions
Preheat oven to 425°F and line a baking sheet with parchment.
Then simply whisk together the dry ingredients, add the wet, and whisk again.
Let it stand a few minutes to absorb and thicken.
Then spread onto the baking sheet to the desired thickness.
Today I poked holes in to mimic focaccia, then topped with coarse salt, olive oil, and parsley.
Bake 18-20 minutes for pizza base, or a bit longer for bread (because pizza will go back in the oven a second time after toppings are added)
