It’s a bit nippy in Cape Town today so lunch was butternut soup and mini muffin pan pizzas made with only 3 ingredients. They flew off the plate.. Enjoy 😊
Ingredients:
2 cups self raising flour
1 cup of plain yoghurt or buttermilk ( I used buttermilk )
3/4 tsp salt
Method:
Mix all ingredients in a mixing bowl.
Bring dough together and knead for about 2 minutes on a lightly floured surface. If dough feels too sticky add a little more flour as you are kneading.
Roll out dough as round medium sized pizzas, 1 large pizza square or as I did grease your muffin pans with a little melted butter cut out your rounds a little larger than your muffin size and place in muffin pan. 2 tomatoes grated get rid of the juice it will make your dough have a wet bottom.
Rub a little tomato paste on the dough, place a little grated tomato in your shell and bake at 180 C for 10 minutes in preheated oven.
You may use any barbecue or chilli sauce on the bottom of your dough instead of grated tomato.
Remove from oven and add your grated mozzarella/cheddar/feta cheese, ham salami, mushrooms, peppers etc or any filling you desire. Sprinkle of origanum over and return to oven and bake further until the cheese melts.
Leave to cool 5 minutes before turning out. ENJOY! Recipe yields 18 mini pizzas
