1 3/4 cups cake flour
2 tsp baking powder
Pinch of salt
1/2 tsp of nutmeg
1/2 tsp ground cloves
1 tsp ground cinnamon
3 large eggs
3/4 cup castor sugar
1/2 cup canola oil
1/2 cup milk
2 x 385g tin apples for filling or one large tin
Topping
2 tbsp white sugar
1 tbsp brown sugar
1 tsp cinnamon powder
Instructions
Preheat oven to 180 C (fan assisted oven 160 C)
Grease a 25 x 32 cm rectangular baking dish.
In a bowl add the flour, baking powder, salt, nutmeg, cloves and cinnamon.
In another bowl beat eggs and sugar together until light and fluffy.
Add in oil and mix until all blended.
Slowly add in the flour mixture, alternating with the milk and mix until well combined.
Place just over half the batter in the bottom of the prepared pan.
Lay the apple pieces over the batter.
Drop remainder spoonfuls of batter over the apples. Spread to cover.
Mix the cinnamon and sugars together for the topping.
Sprinkle over top of the batter.
Bake for 35 minutes ( on 160 C ) until golden brown or until a skewer comes out clean.
Cool completely and then cut into squares to serve.
Serve with fresh whipped cream
