Something different for dessert yesterday, yummy potato dumplings served with fruit salad ππEnjoy!
Boil up 4 medium potatoes until tender.
Drain and mash with a potato masher, add 1/4 tsp salt, 2 tbs butter.
Mash until butter has melted.
Add 1x egg and stir in 1 cup cake flour.
Knead the dough. Dough is quite sticky.
Add a little extra flour if too sloppy.
Depends on the size of your egg.
Work with wet hands.
7 x Apricots halved with pits removed
Sugar for sprinkling over apricots
Boil up water in a large saucepan keep it on a gentle boil.
Break dough into 7 equal portions
Flatten dough in the palm of your hand, place 1/2 apricot in centre of dough sprinkle a little sugar over then place the other 1/2 of apricot and close up with the dough into a ball working with wet hands.
Drop into boiling water and boil for 10 minutes.
I did these in batches.
Remove to a plate with a slotted spoon to cool slightly.
In a large frying pan melt 125 g butter,
1 tsp cinnamon,
1/2 cup castor sugar stir until melted then
add 1 cup fine breadcrumbs.
Roll the dumplings in the breadcrumb mixture.
Serve with a thin vanilla custard or a sprinkle of icing sugar and fresh fruit salad.
