4 x Chicken breast fillets.
Place between 2 sheets wax paper and pound with mallet for evenness when grilling in skillet.
Spice with cajun spice, garlic powder, chilli flakes, paprika spice, salt, black pepper.
In a skillet grill 4 to 5 minutes per side depending on size of fillets.
8 x large brown mushrooms spice add minced garlic and a knob of butter, pinch of parsley.
Grill or cook in pan until tender.
Use the mushrooms instead of your breadroll (bottom and top of burger)
4 x slices of brinjal (aubergine) spice and roast in oven for 20 minutes or until tender.
4 x slices of tomato. Handful of rocket and any sauce you wish to use.
Build your burger.
Start with mushroom as your base, add rocket, chicken fillet, sauce of choice, brinjal, tomato and top with another mushroom.
Serve with green salad. Enjoy.
200 pkt of fresh baby spinach
Handful of radishes sliced thinly
1 red onion sliced
10 x cherry tomatoes, halved
150g blue cheese crumbled
Salt, black pepper, sprinkle of lemon juice, drizzle with olive oil and balsamic vinegar.
