Gail's Ginger Bread

125 g softened butter or margarine
2 1/2 cups cake flour
2 large eggs

1/2 cup sugar ( I used soft brown sugar )
2 teaspoons baking powder
1/2 teaspoon bicarbonate of soda
1/2 teaspoon salt
2 teaspoons ginger spice
2 teaspoon cinnamon spice
1/8 teaspoon clove spice
1/8 teaspoon mixed spice
1 cup syrup
1 cup boiling water
Cream the butter/margarine, add sugar and mix well. Add eggs. Sift together all dry ingredients and add to first mixture with syrup. Add boiling water last. Pour into well-greased loaf pan and bake at 160 C for approx 60 minutes or until a skewer comes away clean. If the loaf is browning too fast place a piece of tin foil over.
