Gail’s Marble Loaf Cake

Ingredients
200 grams of room temperature butter
1&3/4 cups of sugar ( I used castor sugar )
3 extra large eggs or 4 medium sized eggs
3 tablespoons of vanilla essence
300 grams of sifted cake flour
1 heaped teaspoon of baking powder
3 tablespoons of cocoa powder
2 tablespoons of milk

Method
With electric mixer , cream the butter for about 2 minutes add the sugar and mix till light and fluffy ( about 2 minutes) .
Add the eggs one at a time , and mix well , add vanilla essence , mix for another minute . Now add all the dry ingredients and mix – about a minute .
Preheat oven to 190 C adjust to lower temp if using a fan assist oven and spoon 3/4 of vanilla cake batter in a well greased loaf baking tin or use a greased bundt tin. Add the cocoa powder and milk to the remaining batter and mix well , now spoon the chocolate batter on top of vanilla batter and take a butter knife and swirl the batter around to form a marble effect . Bake for an hour or until you insert skewer in the centre of the cake and it comes out clean .

Note: I made a chocolate ganache icing and spread over the cake
1 slab of Albany dark chocolate, 1/4 cup cream, 2 tbsp butter. Place in jug in microwave, on 50 % heat and melt stirring at 30 second intervals until the chocolate is melted and smooth. Cool slightly and then spread with a palette knife.
