4 x White fish fillets washed trimmed and dried in paper towels (can use Norwegian Salmon)
1/4 Cup butter
1/3 Cup honey

4 x Cloves minced garlic
2 x Tbsp chopped parsley
Juice of one lemon
Salt and Coarse black pepper
Sprinkle of Parmesan cheese
Salt and pepper your fish according to taste.
Melt butter, add minced garlic, chopped parsley, honey and juice of lemon. Pour over the fish fillets and enclose in the tin foil.
Preheat oven to 190 C. Use a large baking tray and tin foil.
The fillets of fish are cooked enclosed in the foil for the first 15 – 18 minutes then open the foil and on grill, grill for a further 5 minutes, add a sprinkle of Parmesan cheese to caramelize and brown the fish.
Serve with garlic butter Parmesan potatoes, rocket salad and lemon slices.
Garlic Butter Parmesan Potatoes
Peel 5 potatoes and boil up in salt water for 20 minutes or until tender.
Drain and smash with a fork or potato masher. Place in baking dish.
Add black pepper and taste for salt.
Melt butter, add minced garlic and chopped parsley and pour over smashed potato. Sprinkle with Parmesan cheese and grill in oven for 10 to 15 minutes or until potatoes are crispy.
