2 cups cooked pumpkin drained and mashed
1 1/2 tbsp sugar
2 tbsp butter
Mash pumpkin with sugar and butter let cool
Add 1 cup flour, 1 egg lightly beaten, 1 tsp baking powder, pinch of salt and combine.
If mixture is too runny add more flour.
Shallow fry in frying pan with vegetable oil. Drain on paper towels.
Sprinkle with cinnamon sugar. Substitute with sweetcorn for variation.
