Gail’s Starbucks Lemon Loaf

TRH Gail's Starbucks Lemon Loaf

Preheat oven to 180 C. Grease a medium loaf tin well
1 1/2 cups cake flour
1/2 teasp baking powder
1/2 teasp baking soda
1/2 teasp salt
Sift the above together in a bowl
1 cup castor sugar
3 eggs
2 tablespoons softened butter
1 teasp vanilla essence
1 teasp lemon essence
1/3 cup (80 ml ) lemon juice
1/2 cup oil ( recommend coconut oil ) I used vegetable oil

Combine eggs, butter, sugar and 2 essences and lemon juice and beat well on medium speed with mixer. Add flour mixture gradually and mix until all blended. Lastly add oil and beat further. Pour into loaf tin and bake for 45 mins or until skewer comes out clean, cool and then ice with lemon icing

Icing
1 cup sifted icing sugar
2 tablespoons milk
1/2 teasp lemon essence
Mix altogether and frost the loaf once cooled
