Gail's sweetcorn feta fritters

Ingredients:
1 med can sweetcorn kernels (drained)
1 red chilli de-seeded and chopped
3 chopped spring onions
75 g crumbled feta cheese
75g self raising flour
1 egg whisked with 50 ml water
Salt and pepper to taste
Canola oil for shallow frying
Mix all above ingredients together to a lumpy batter.
Heat canola oil in pan over low medium heat.
Spoon spoonfuls of batter into oil and cook for 2 minutes then flip fritter and cook the other side further until done.
