Chicken pieces marinaded in a mixture of
The juice of 2 lemons
3 tablespoons of melted butter or oil
Salt to taste
1 teaspoon of black pepper
1 tablespoon of tandoori masala
1-2 teaspoons of chili powder
1 tablespoon of paprika
1/2 a teaspoon of turmeric
1-2 tablespoons of grated garlic
A drop of red and yellow food colouring .
Some chili flakes .
After marinading for a few hours …bake in a very hot for 40-50 minutes . Or put on some coals and braai the chicken . I serve it with salad , potato and lemon wedges and avocado drizzled with fresh Lemon juice and a hot sauce.
* Note I peeled 6 medium sized potatoes par boiled them in a little salt water. Drain in a colander and sprinkle with flour. Then I dipped them in the same Tandoori marinade that I put on the chicken. Baked them together in the same baking tray that the chicken was roasting. They were delicious ! No need for oil because they roast in the chicken fat and juices
