Rinse one whole chicken and slit the center till it opens up and set on oven proof dish.
Sprinkle thyme on chicken and rub with a little ginger and garlic and cover chicken with foil and put in a 200 degree oven.
In a small bowl mix 1/2 tsp salt, 1 tbs oil or butter, 1 tbs lemon juice, 1/2 tsp ginger and garlic, black pepper, 1 tsp crushed chillies, peri peri sauce, osmans chilli sauce and mix well.
Take chicken out of the oven baste well with sauce and close with foil and cook.
Turning chicken and basting after every few minutes till chicken is cooked.
Once done remove foil and leave in oven for few minutes to roast the skin.
