Irene’s Chocolate cakes

2 cups flour
1 cup brown/white sugar (tried both successfully)
2 tsp baking powder
1 tsp bicarb
1/2 cup cocoa powder
2 eggs
1 cup milk
Half cup coconut oil in liquid form

Mix all the dry ingredients together with a beater and then mix the wet ingredients together.
Combine both thoroughly.
Now add 2 tsp strong coffee or vanilla essence to a cup of boiling water and mix in gently into the batter until well combined.
Bake in a greased oven tray @ 180°c for +-30 minutes.
I used 1 bundt tin + loaf tin with this mixture.
Ice cake once completely cooled.

Choc-Icing
Melt 2 tbs coconut oil or butter in 1/2 cup milk for +- 1 min in the microwave.
Add 1 tsp vanilla essence or 1/2 tsp strong coffee and mix well.
In a separate large bowl, mix 2 cups icing sugar + 4 tbs cocoa powder.
Mix in the hot milk mixture until smooth.
Add more icing or milk if needed to get to the desired consistency.
Pour over cooled cake. Decorate as desired. Enjoy!
