This recipe yields 30 medium bars
Cover and melt 250g butter/margarine in the microwave and then mix in 125ml coconut oil (in liquid form), 6 tsp golden syrup & 1 tbs vanilla essence. Keep aside.
Combine the ingredients below in a large bowl….
250ml brown sugar
500ml self-raising flour
500ml jungle oats
250ml desiccated coconut
125ml crushed all bran flakes
125ml mixed seeds (sunflower / pumpkin / etc.)
125ml roughly chopped dried fruit (apricots / cranberries / safari fruit chews)
125ml chopped nuts (optional)
Add the melted liquid into the dry ingredients and mix well until all ingredients are evenly distributed. Press the mix tightly into a prepared oven tray.
Bake in a pre-heated oven at 180 deg cel for 15 minutes.
Remove from oven, cut into bars (whatever size you prefer) and bake for a further 15 minutes at 150 deg cel.
Remove from oven, cut over the slices again to separate each bar. Leave to cool completely and then drizzle with melted chocolate of your choice.
I have tried many different chocolates but find that white chocolate (milky bar / dream) compliments these bars perfectly. Enjoy
