1 cup self raising flour
1/4 cup maizena
3/4 cup buttermilk
1/2 cup milk
6 tbs oil
1 egg, separated
1 tbs sugar
1 tsp vanilla essence
Mix the flour and maizena in a bowl.
In a separate bowl or measuring jug, mix the buttermilk, milk and oil.
Then mix in the egg yolk and set aside. In another bowl beat the egg white almost to soft peaks.
Add in the sugar and continue to beat until the peaks are firm.
Beat in the vanilla essence.
Pour the buttermilk mixture into the dry ingredients and whisk until just mixed.
Fold the whipped egg white into the batter, a little at a time until just incorporated.
Pour the batter onto the preheated snackwich toaster which has been brushed with butter or sprayed liberally with spray and cook (+- 2 tbs per sandwich holder) or waffle maker (as per waffle maker instructions) and cook for 3-5 mins, until light brown and cooked through.
Serve with syrup, ice cream, cream or savory toppings. Enjoy.
Tip: don’t store the waffles one on top of another while it is still hot….it will lose its crisp exterior
