Irene’s Spicy, Sweet & Sour Mango Pickle

10 medium half ripe mangoes (cut any way you like)
4 tbs coconut oil
1 tbs jeera seed
1 tsp mustard seeds
1 tsp methi powder
Pinch of hing
10 garlic cloved (halved)
1 tbs freshly grated ginger
curry leaves
5 green chillies halved lengthwise
2 tbs crushed dry chillies
1/2 tsp turmeric
1 cup sugar (I used brown)
1 cup white vinegar

Cut, wash and drain mangoes.
Place in a microwave safe dish, cover and steam for 5 minutes.
While this is steaming, heat oil in large pan.

Add 1 tbs jeera seeds,
1 tsp mustard seeds,
1 tsp methi powder,
Pinch of hing,
10 garlic cloves (halved),
1 tbs freshly grated ginger,
curry leaves,
5 green chillies halved lengthwise,
2 tbs crushed dry chillies &
1/2 tsp turmeric.

Fry on medium heat for a few mins.
Add sugar and vinegar and boil for a few mins until sauce thickens.
By this time the mangos should be done in the microwave.
Add hot mangoes to the hot sauce and mix properly, cool and bottle. Serve as an accompaniment to any meal or just on its own! Enjoy
