6 slices of Italian bread (ciabatta) shredded.
Add 1 cup of milk and soak till bread is soft.
750 gr minced meat
½ cup parmesan cheese,
2 eggs
Seasoning (Salt, pepper, Italian seasoning, oregano, thyme parsley)
Few slices of pancetta (Italian bacon)
Sauce
1 cans chopped tomatoes drained,
2 TB brown sugar,
Salt and pepper, Worcestershire sauce, tsp mustard powder, pinch of cayenne pepper.
Mix together in a bowl and set aside
Method:
Add the bread mixture (including the milk) to the mince and mix to combine.
Add the remainder of the ingredient except the bacon and mix well to combine.
Form a loaf and wrap bacon over the top.
Spoon the sauce over meat loaf in single layer.
Made Italian Meatloaf for supper tonight.
