I had left over yellow potato fry/ dry potato curry so used this up.
Mashed it as I had it in the fridge so was cold already.
Alternatively boil, drain and mash two cups of potatoes, add spices you prefer…leave in fridge too cool and then use:)
Made white Roti-
2 cups plain flour
4 tblsp oil
3 tsp ghee
Hot boiling water as required to make a medium dough.
Let it rest for 10 minutes before you start making parathas.
Roll 2 rotis
Spread potato onto roti as in picture
Sprinkle cheese not to close to edge, leave some space for pinching sides, pinching style is similar to when making poli or gugra.
Once done toast with a little ghee on both sides.
