Chana dal with Dudhi (calabash)
Ingredients
1.5 cup split Chana dal
1 large onion finely chopped
1tsp mustard seeds
1 tsp cloves
3 cinnamon sticks
1 tsp asafoetida( hing)
2 dry red chilli
4 tblsp oil
3 tsp green chill ground
1 tsp garlic
1 tsp ginger
2 tsp red chilli powder
1 tsp turmeric
3 tsp salt- adjust as per taste
1 cup liquidised tomatoes
1 tblsp Garam masala
2 cups cut dudhi(calabash)

Method
Soak 1.5 cups of spilt Chana dal in lukewarm water overnight.
Next morning drain out water, wash with clean water and drain in colander.
Make a vagaar (braise)
With oil, dry red chilli, clove, mustard seeds, cinnamon, asafoetida( hing), then add drained dal and onion mixture.
To the above add-
Green chilli
Red chilli powder
Garlic
Ginger
Turmeric
2 cups cut dudhi (calabash)
and 4 cups water

Let it all cook for a while on medium heat until Chana looks a bit cooked then add tomatoes.
Cool until dal and dudhi is cooked and you can see some oil on the top.. then you know it’s ready
Before serving add Garam masala and chopped dhania.

Baby Brinjal sambaro
2 cups cut brinjal
3 tsp garlic
2 tsp green chilli ground
1 tsp asafoetida – hing
1.5 tsp salt- adjust to taste
1 green chilli chopped
1/2 tsp turmeric
3 tblsp cut shallot
3 tsp ghee
Make ghee hot on medium heat.
Add hing and green chilli chopped.
Now add rest of ingredients and cook on high heat for a few minutes and it’s done🎉🎉👍

Fulecha
3 cups cake flour
2.5 tsp baking powder
4 tblsp ghee
2 tblsp oil
1.5 tsp roasted cumin seeds- jeera
1.5 tsp salt
1 tsp sugar
1 tblsp semolina
1/2 cup plain yoghurt and 1/2 cup water
Oil to fry

Method
Place all ingredients in a bowl until it resembles a bread crumb texture except, Baking powder water and yoghurt.
Boil water and yoghurt and let it cool until slightly lukewarm.
To the dry ingredients, that resembles bread crumbs you’ve mixed in the bowl add slowly the lukewarm mixture of yogurt and water to resemble a medium dough.
You might not need all the yogurt and water mixture- add a little at a time.
Then knead the dough and roll out, cut into diamond shapes or rounds and fry in medium hot oil.
