Joelene's Tomato Stew – Bredie

TRH Joelene's Tomato Bredie
For fast cooking in India, I suggest my friend the pressure cooker.
I grew up with what is known as Bredie. Also called a stew.
It slow cooked meat, with potatoes and vegetables in a delicious gravy. Comfort food
Ingredients
500 g boneless lamb cubes
3 onions – chopped
3 tomatoes – chopped
4 potatoes – halved
Ginger/garlic paste
4 cloves
Cinnamon stick
Sprinkle of jeera and mustard seeds
3 dry red chilli
Olive oil
200g tomato puree
Dash Worcester sauce
Half teaspoon sugar
Salt and pepper to taste
Method
Heat olive oil
Add spices and chilli
Sautee onions
Add ginger/garlic paste
Add tomatoes
Sautee all till done
Add lamb cubes
Salt and pepper and simmer
In a bowl mix puree, dash Worcester sauce, sugar and add water to make a gravy
Add this to simmering lamb, and cook for 7 whistles
Open cooker add potatoes and cook for a further 2 whistles.
Open cooker and simmer till gravy thickens
Serve with steamed rice.
