Kamalini’s Moong Lentils

Soak one cup moong lentils in two cups water for a few hours
Heat two Tablespoons oil and add a chopped onion
Add 1t mustard seeds
1t jeera seeds
Cinnamon
Clove
Bay leaf
Curry leaves green Chillies
1t Garlic
1t ginger
Pinch hing
1/2 t Methi powder

Braise till onion turns slightly brown
Add 1t Kashmiri chili powder
1/2 t Dhania powder
1/2 t jeera powder !
1/2 t Garam masala

Add drained moong. Cook on medium heat for twenty minutes
Stir regularly.
Chop one tomato.  Add tomato and water little at a time to get a thick gravy !
Serve with lemon wedges.
