  1. Preheat the oven to 350°F/180°C.
  2. Line a baking tray with parchment paper or use a baking mat and set aside.
  3. Stir together all ingredients in a mixing bowl until well-mixed; the dough will be thick and dense, it’s what it should be so do not stress about it.
  4. Divide the dough into 18 balls, by scooping the dough (I eyeballed it) and placing it on the baking sheet. Separate the balls and space them slightly apart as they do spread a bit, but not a lot.

  5. Use a fork and lightly flatten each ball by pressing down and forming a criss-cross pattern on the cookie (or however you want to decorate it).
  6. Bake for ±12-15 min or until the edges of the cookies turn brown.

  7. Note: The cookies will be very soft coming out of the oven; but they will be perfect once cooled.

  1. Oh, my. I would have to say this is one of my favorite recipes you have posted. I mean, like, I love baked foods, especially cookies and muffins. And this is just for me!! Definitely a must try. Trying to find the Mond Fruit sweetener might be a challenge for me. Never used before. Is this a speciality item or with all the other sweeteners in the bake isle?
